If my main switch/device croaks, how easy is replacement and reconfiguration? Is it done offline? What if I need to keep a demo kit for more than 15 days? Can I use the demo kit for End User POC? Meraki phones are stand alone. MC74 is its own cloud managed and SIP connected telephony solution.

There is a role defined for camera viewers that have no access to other devices in an organization. All network administrators can view and configure cameras. Very detailed User roles and permissions for cameras is available here
We don't know. It's not likely due to differences in features and markets.
At this time, Meraki is not included in the Evolve program. We do however think this is a great idea and hope to add the product in the future.

There's a 30 day grace period during which the system sends notifications to the administrators to renew. If these are ignored after some time, the system will become inaccessible.

We can extend the time as needed and if kits are available. We allocate on a first come - first served basis. Since there is a limited number of kits, we need to be sure everyone has an opportunity to take advantage of the demo kit program.
Yes you can as it is a fully functional demo kit that can be set up for POC to your end user customers. Also it can be leverage for technical group training too.

With business justification and commitment, we will modify a kit to fit your needs. We've carefully selected a mix of product for the greatest impact for your customer. We can temporarily license equipment in a demo pod if desired, but this has some caveats we can discuss offline.
All of Meraki's hardware stack requires a fully digital connection. There is no provision to convert voice streams to digital for use with the phone system. The phone is SIP only and requires one of the approved providers to function.
